Not to sound aggressive, but, I fucking love banana bread.

I have no idea where the obsession first started, but one day I was just like “yea, I’m going to become utterly obsessed with you”, and here we are. Talking about banana bread cookies on a Wednesday morning instead of logging onto our work email and facing the day.

I feel you. I wake up at like, the ass crack of dawn every day, so by 9AM, my brain is ready to focus on something else other than work.

LIKE BANANA BREAD.

I’d like to start by telling you that if you are over the age of 25 years old, you absolutely need to always have frozen bananas in your freezer. The thing is, when you make banana bread, or really anytime you bake with bananas, you want them to be OVERRIPE AS F*UCK. Like, dark as hell and almost a bit mushy. The type of bananas you’d look at on someone’s kitchen counter and be like “bish, you need to clean.”

Yea… THOSE ugly ass bananas, you want to keep them in your freezer for 1 of 2 reasons:

  1. You, nor your house guests, need to bear the sight of them.
  2. You are always prepared to make banana bread.

NEED I EXPLAIN FURTHER?

Reason being, using overripe bananas when baking SERIOUSLY amplifies the flavor that you get, and if you love banana bread just as much as I do, then you’ll love these. They are quick, they only require 3 ingredients, and they satisfy that chewy cookie craving that takes over us all of us from time to time. (think oatmeal raisin type of chew)

Will these change your life? No, but they are a healthier alternative to plowing through an entire loaf of banana bread by yourself (because let’s just leave our personal lies at the door) and save well for a few days when stored in a sealed container. I guess that means they are GREAT for traveling or even for meal prep Sundays!!! (if you’re into that type of shit)

Also, before someone attacks me, these are in no way “homemade” unless you’re like, growing the fucking bananas yourself, in which that case, I’d like a shipment of some, but if not, then please just ignore this run on sentence and carry on with your day.

3 Ingredient Banana Bread Cookies

3 packets of instant maple brown sugar oatmeal (I use these.)

1 larger overripe banana, mashed

water as needed

*optional chocolate chips

Preheat your oven to 350 degrees. Mix packets of instant oatmeal with mashed banana and add water as needed to create a cookie like consistency. You’ll think they are too mushy, but don’t fret! Just make sure you’re still able to create structured spoonfuls of the mixture. (I didn’t add pictures because it’s not the prettiest)

Spoon “cookies” onto a GREASED baking sheet and bake them for 10-15 minutes, or until golden brown on top. Remove cookies and check their middles to see if they are done. You want them to come out with some softness to them, but NOT wet. This will keep the insides nice and chewy. If you’re unsure, just put on a podcast and wait by your oven so you don’t overcook them.
